Pizza prep table not holding temperature, compressor hot to the touch.

Pull the grille and this is the condensing section: dough scraps, flour, and a fan that had stopped turning. In a pizzeria, flour goes airborne all day. The condenser fan pulls it in and it packs into the coil fins like felt. The coil can’t reject heat, the fan motor runs hot against the restriction, and eventually the motor gives up.

The motor is a Weiguang YZF10-20, a 120-volt shaded-pole condenser fan motor. A cheap part doing an important job. New motor in, coil cleaned out, compressor back to a normal temperature.

Then the check that actually matters: a thermometer in the product zone. Display read 40, product at 39.9, kitchen at 73.5. Working.

What to do about it: the condenser coil on a prep table in a pizzeria needs brushing out monthly, not yearly. It’s a five-minute job with the grille off. The fan motor was cheap. A prep table full of spoiled product is the number nobody wants to write down.
