The call

Three back-bar coolers under a cocktail bar. Two fine. One freezing the garnish and, according to the bartenders, sweating. The controller on the front said 39 and looked happy about it.

What we found

The front grille came off and the evaporator coil was iced solid, top to bottom. A back-bar cooler runs its coil right behind the doors, so when it ices, air stops moving through the cabinet. Whatever sits nearest the coil freezes and whatever sits furthest away warms up. A jar of peppers on the top shelf had done the freezing.

The display was not lying, it was measuring the wrong thing. Its probe sat in air coming off the ice, so it reported a cabinet that was fine while the product told a different story. Bar coolers ice for a short list of reasons: defrost not running, doors left ajar on a busy night with the bar at 71 degrees and 42 percent humidity, or a gasket that has given up.

The work, in order

  1. Coil thawed.
  2. Defrost operation checked.
  3. Door seals checked.
  4. The other two units checked while we were under the bar, because three coolers of the same age fail on roughly the same calendar.
  5. Product zones measured with our own instruments rather than the controller display.

Verified before leaving

Two thermo-hygrometers on the bar top, each with its probe in a cooler’s product zone. One unit at 37.0 degrees, the next at 36.1, with the bar itself at 71 degrees and 42 percent relative humidity. That is a working set.

What this means if you manage the venue

If a bar cooler starts freezing the garnish, do not turn it up. Turning it up hides the symptom; looking at the coil finds the cause. And when one of a matched set fails, the cheapest time to look at the others is while the tools are already under the bar.
